Honey creaming machine is a mixing and stirring machine for the production of creamed honey. Made of stainless steel and fitted with a fully automatic controller, this machine has a capacity of 200 L (280 kg). The Honey creaming device, operating at 230V and equipped with an automatic controller, ensures that the honey achieves the ideal creamy texture. The design of the mixing propeller, crafted from acid-resistant stainless steel, enables precise cremation of honey.
The creaming process should follow repeatable "work - stop" cycles. Mixer operation typically lasts between 5 and 15 minutes, followed by a stirrer standstill period ranging from 45 to 480 minutes. The total creaming time can be set between 1 to 99 hours. Properly creamed honey has a consistency similar to butter, making it spreadable and smooth.
It is also possible to customize the machine to meet specific requirements upon individual request.
Fresh honey begins as a thick, transparent substance, but over time, it naturally crystallises. The ideal crystallization temperature is between 16 and 18°C. At higher temperatures, the crystallization process slows, resulting in larger crystals. When heated to 40°C and held for several days, honey changes from a crystallized (crusty) state to a liquid (patoka) form.
The creaming device includes a special mechanical stirrer that facilitates the recrystallization process. After treatment, the honey acquires a spreadable consistency akin to that of chocolate creams. This process involves cyclic aeration and intense mixing over a period of days, which achieves the desired consistency. Aeration occurs naturally during the mixing stages.
The mixing process is carried out multiple times a day for 10 to 15 minutes at a time. As an example, crystallised honey can be added to the pot at the start of the cycle. The creaming process creates numerous small crystallisation nuclei, preventing the growth of existing honey crystals and grinding the honey crystals into finer particles. When stored at a constant temperature, creamed honey retains its smooth consistency for several months.
